Now, I must admit, dear reader, that I'm somewhat obsessed by quiches, and whenever I see one on a restaurant menu, they will in all likelihood be selected for lunch. On this count, I can confirm that for my last 15 lunches (at least) I have had at CT in Houston, I have had the quiche du jour. Obsessive, I know, but if one is a quiche-amor, then what option does one have? And it has yet to disappoint. The pastry is deliciously crumbly, the egg custard a wonderful consistency and taste to match, and ably supported by what is arguably the best (read simplest and freshest) salad in town. And all supported by a glass of chilled Marie-Antoinette Pouilly-Fuisse, and lo! Heaven on earth. Simply outstanding, and outstanding in its simplicity. Bravo!
